Regarding to the colors – continuation … The hero of today is blue. In addition to having a number of properties in repair mechanisms, such as: inhibiting inflammation, reducing edema, quieting, aseptic, stimulating creative thinking, also has an inhibitory effect on appetite. Similarly to violet which has already been described, it helps to eat less people keeping the figure in check. A blue tablecloth on a table or plates in this color will make the amount of food less than in comparison with yellow or orange. Another thing, very interesting and unique, is the natural blue color in nature – or rather in food. As you can guess, it’s hard to find. Dr Katarzyna Gieczewska from the Department of Plant Anatomy and Cytology at the Faculty of Biology of the University of Warsaw during the lecture “Colorful world of plants” mentioned that in the Polish flora there are 110 species of plants from which one can obtain 70 more species come from abroad. According to the biologist, the most is the possibility to get a yellow pigment from plants, a bit less – red and green. The hardest thing is to get cobalt blue or deep black. Colors from plants are usually obtained through cooking or fermentation. This was the case with, for example, the blue color – indigo. It was obtained by long-term fermentation of the indigo leaf. This is too complicated procedure for me, so I decided to look for an easier way to enjoy and get something “blue”! I went to the cuisins of the world and found my treasure – blue peas. The infusion of blue peas flowers is prepared very easily, by pouring boiling water over the dried or fresh flowers. The color in flowers is so intense – just a few flowers per glass of water to get a beautiful blue “drink”. With only a few flowers used, despite the fabulous color, the taste is poorly felt, but when we add more pieces, there appears a slightly floral taste similar to hibiscus. You can brew any amount of flowers for the same amount of water. It all depends on what power of colour or taste we want to get. It is worth noting that one portion of flowers can be used to prepare several infusions after each other and the color of the extracts will still be intense. By the way, you appreciate your brew anti-depressant, anti-inflammatory and anti-cancer properties. Cin cin!
